Soybeans are one of the world’s great high-protein, low-fat foods. Farmers are planting more soybeans every year, while food processors keep developing new ways of mashing, crushing and turning them into good-tasting food, like soy granules, which you can find at natural food stores and growing numbers of regular groceries. These granules, when added to other foods, are high in nutrition and have a taste and texture just like meat, yet without a gram of fat.
Soy products come in many forms. “I use a type that you soak in water and make into hamburgers,” says John Chang, a fat-conscious airline pilot. “And there’s a type for Sloppy Joe’s—delicious! You’d swear it was meat.”
